There’s something absolutely comforting about soup; it has the ability to warm from the inside out-perfect for this time of year. I’ve come to love puréed soups as the flavors can be layered while maintaining a smooth consistency; my clients have come to love them too.
When I set out to create this recipe I was thinking how can you make this even better than it already is, I mean black bean soup is pretty delicious; but then it donned on me, instead of garnishing the soup with avocado, I would blend it into the soup.
The avocado added not only a creamy texture but a robust flavor to this already robust soup. This recipe either calls for cooked black beans or canned beans; the benefit of using canned black beans is that you will eating in less than 20 minutes; however, for those staying away from any canned goods, cooked beans work just fine but it will take you a bit longer to prepare- the choice is yours!
The soup, served alongside a hearty piece of bread, makes for a very satisfying meal!
Creamy Black Bean Soup
Makes 6 dinner sized servings
Ingredients:
2- 398 ml can/ 6 cups cooked drained black beans
½ sweet Vidalia onion
1 avocado
1 tsp olive oil
½ tsp salt
½ tsp red chili flakes
900 ml chicken or vegetable broth
1 tsp cilantro
1 tbsp lime juice
Directions:
Heat oil in pot on medium high heat; add the onion and cook until fragrant and transparent- about three minutes. Add the beans, chili flakes and salt; and cook, stirring constantly, for 3 minutes. Add the broth and bring to a boil; reduce to simmer and cook for an additional 10 minutes. Remove from heat, add lime juice and avocado; and puree until smooth. Adjust seasoning if necessary and garnish with cilantro leaves
