The forecast for the week is going to be a rainy one in NYC. Personally, I love an occasional bout of rain. It gives me an excuse to slow down and take refuge at home with some cooking and soup making. I made an interesting all-green soup yesterday (will share the recipe soon), and today I am thinking about homemade vegetable broth. I also love kale soup, butternut squash and roasted cauliflower that would be perfect for a day like this. Here are some more of my favorite sous to prepare and enjoy on a day when you probably just want to stay inside.
Roasted Cauliflower and Chickpea Soup – A newer soup in the Seriously Soupy rotation, I love this creamy texture that actually doesn’t have any cream. Essentially it is just cauliflower, chickpeas, dill and garlic that creates a deliciously nutty taste you will love.
Vegetable Kale Soup – I am a big fan of kale and soups, and in this recipe the kale really absorbs with all of the delicious flavors of the various vegetables and broth thanks to the addition of dill, parsley, basil and bay leaves.
Salmon Butternut Squash Soup – Probably one of my favorite soups on Soupy, this Salmon Butternut Squash combines some of my favorite foods to create a unique and healthy fish soup. I also included some dill, scallions and onions to complete this tasty recipe.
