Since tomorrow is the first day of summer I thought it would be a perfect time to list all of the chilled soups that I experimented with on Soupy. Prior to Soupy I didn’t really appreciate and know that much about chilled soups – thinking that gazpacho was the only option when making these types of soups but I couldn’t have been more wrong! Through Soupy I discovered much about chilled soups including how to experiment with various seasonal ingredients that are gently stewed, cooked, mashed and chilled for a refreshing summer treat. Even better is that I have actually started to love these types of soups and can’t wait to test out more varieties this summer. Until then, enjoy some of my favorite chilled soup recipes that I hope will inspire your own creations this summer.
Blackberry and Grape Soup with Lemon Thyme – A part of Rainbow Soup Month, this refreshing soup used cherries, grapes and blackberries – and fresh herbs like basil and lemon thyme. I stewed the fruits by boiling them with the herbs and some sugar that was then blended together to create this vibrant soup. The lemon thyme and basil was also a great addition, which gave it a mild spice that complimented well with the sweetness in the fruits.
Chilled Blueberry Mint Soup – Another soup for Rainbow Soup Month, this simple soup used a delicious combination of blueberries, Greek yogurt and fresh mint. The quick soup was cooked in less than 5 minutes and then chilled for a tasty treat.
One Cantaloupe, Three Soups- Featuring three variations using cantaloupe, this chilled soup recipe list includes the refreshing Prosciutto and Melon Mint Soup, Green Tea-Infused Melon Soup topped with Dried Apricot and Triple Melon Basil Melon Soup.
Gazpacho Soup Recipe- A classic soup, this Gazpacho was created with cherry tomatoes, red peppers and cucumbers, garlic, lemon juice and some basil to create this tasty and refreshing summer favorite.
Chilled Watermelon/Lime Soup - One of my favorite summertime fruits, watermelon, has to be one of the most refreshing and satisfying treats to enjoy on a hot day. For this soup I made it with fresh basil, lemons and lime, salt and water for new way to enjoy this refreshing treat.
Grilled and Chilled Peach Soup – This soup features peaches that was grilled with fresh mint, basil and lavender to enhance its flavors. It was then blended with some cinnamon, sugar, water and salt and then chilled for a tangy/sweet soup that is sure to be a hit this summer.
Raw Spinach Soup – This Raw Spinach Soup by Jessica Hulett was created with avocados, spinach leaves, cucumber and a delicious combination of flavors like nama shoyu (raw soy sauce), fresh ginger, cayenne pepper, and garlic for a light and healthy summer soup.
Chilled Cucumber Yogurt Soup with Dill- One of the first chilled soups I tried on Soupy, this Chilled Cucumber Yogurt Soup was created with a thick Greek yogurt, cucumbers, dill, some lemons and lime. I really loved this refreshing no-cook soup that was ready to enjoy in less than 10 minutes.
Chilled Edamame Soup with Ginger Creme Fraiche – A soup recipe by Nobuo Fukuda that I reviewed in my first attempt to create a chilled soup and crème fraîche. I really loved the incredible rich and nutty taste of the edamame and testing out making my own version of crème fraîche, which involved using a combination of heavy whipping cream and buttermilk.
